These delicious banana and coconut muffins are spiced with cinnamon and turmeric using the
Tejari Organic Golden Banana Blend They are gluten free, refined sugar free, very fluffy, and perfectly spiced.
Ingredients:
- 1 egg
- 40g coconut sugar
- 15g honey
- 1 tsp vanilla extract
- I medium banana
- 40 g coconut flour (I made the coconut flour by grinding desiccated coconut in my blender for a few seconds. It’s technically not coconut flour, but works wonders in this recipe. So no need to buy coconut flour if you don’t have it).
- 1 sachet (28g) or 4 tbsp Tejari Organic Golden Banana Blend
- 1 tsp baking powder
Instructions:
1. Whisk the egg and coconut sugar for a couple of minutes or until fluffy and paler. Add the honey and vanilla extract and whisk to combine.
3. Add in the banana and mash with a whisk (lumps are totally fine).
5. Add the coconut flour, baking powder, Tejari Organic Golden Banana Blend, and whisk to combine.
7. Divide the batter between 4 muffin tins or liners (remember to butter your tins).
8. Add one or two banana slices on top of each muffin, plus a little desiccated coconut and coconut sugar.
9. Bake in a preheated oven at 350 F for 25-30 minutes or until done.
