PUMPKIN ENERGY BALLS
These pumpkin balls are filled with rich and aromatic fall flavors that will leave you begging for more. This protein balls recipe is made with creamy almond butter, your choice of liquid sweetener, healthy flax meal, and other satisfying ingredients that are filling.

INGREDIENTS NEEDED
Almond Butter–Creamy almond butter is used to hold these pumpkin energy balls together and gives them protein, fiber, and a natural nuttiness.
Pumpkin Purée–Use either organic canned or fresh pumpkin purée for these protein no-bake balls.
Honey–We like to use local honey for this recipe. Instead of honey, you can use maple or date syrup.
Espresso–
Boiling Water–Instant espresso is used to give gluten-free energy balls rich flavors and extra indulgence that blends perfectly with the chocolate.
Vanilla– Pure vanilla extract is used for the best flavors. Be sure to use organic when you can.
Flaxseed Meal–Flaxseed meal is rich with protein, fiber, and omega-3s that are great for this recipe. You can find this ingredient in the baking aisles at most well-stocked grocery stores.
Chia Seeds–Chia seeds are full of protein and great for adding additional nutrients to any recipe. You can find chia seeds at almost any health food or grocery store!
Pumpkin Seeds–Pumpkin seeds are rich in nutrients and fiber and are a great source of protein.
Chocolate Chips–We prefer mini dark chocolate chips because they taste great with the pumpkin and are dairy-free, but you can use milk chocolate if you wish.
Cinnamon–Ground cinnamon is used to give these pumpkin bites extra flavor.
Salt–Salt is used to balance everything out!

HOW TO MAKE NO-BAKE PUMPKIN ENERGY BALLS
TOOLS NEEDED:
- Medium sized mixing bowl
- Spatula or wood spoon
- Small cookie scoop
INGREDIENTS:
- 1 ½ cups old-fashioned rolled oats
- ⅓ cup creamy almond butter
- ⅓ cup pumpkin puree
- 2 tablespoons honey or date syrup
- 1 teaspoon instant espresso + 2 tablespoons boiling water
- ¼ cup Tejari Pumpkin Protein Powder
- 2 tablespoons flaxseed meal
- 1 tablespoons chia seeds
- 2 tablespoons pumpkin seeds
- 3 tablespoons mini dark chocolate chips
- 1 teaspoon vanilla extract
- ¾ teaspoon cinnamon
- ⅛ teaspoon salt
DIRECTIONS:
- In mixing bowl, combine almond butter, pumpkin puree, honey, espresso, vanilla extract, and stir together.
- Add the remaining dry ingredients, and mix altogether until fully combined.
- Use cookie scoop to portion out mixture and roll into balls using your hands.
- Store in an airtight container in the fridge for a week or freeze for longer.
