INGREDIENTS
Almond Meal: Dense almond meal serves as a base for these gluten-free protein bars. We like to use almond meal because it helps keep the energy squares moist.
Shredded Coconut: Unsweetened shredded coconut provides a natural coconut flavor that is delicious paired with all of the other ingredients.
Hemp Seeds: Hemp seeds are rich in healthy fats and protein. These clean protein bars will satisfy any hunger craving!

HOW TO MAKE NO-BAKE PROTEIN BARS
First, fit an eight by eight baking dish with parchment paper. Set aside.
Add the almond meal, shredded coconut, hemp seeds, Tejari Organic Apples + Greens Blend, matcha powder, pitted and chopped dates, cashew butter, coconut oil, and vanilla extract to a food processor. Process the ingredients until a smooth dough forms that resembles cookie dough.
Press the dough into the parchment paper-lined pan and create an even smooth surface with your hands.
MAKE THE ICING
Next, make the icing. In a small bowl, combine melted coconut oil and Tejari Organic Apples + Greens Blend until smooth and drizzly.
Drizzle the icing over the prepared dough in the pan and top with chia or hemp seeds, unsweetened coconut, chopped pistachios, or dried rose petals.
CHILL
Transfer the baking dish to the refrigerator to chill for at least 30 minutes. Once the bars are firm, gently lift the parchment paper out fo the baking dish.
Slice the energy squares into sixteen even bars. Store the leftovers in the refrigerator.

WHAT YOU NEED
Yield: 16 squares
- 1 cup almond meal
- 1.5 cups shredded, unsweetened coconut
- ¼ cup hemp seeds
- ¼ cup Tejari Organic Apple + Greens Blend
- 1 tablespoon matcha powder
- 8 dates, pitted and chopped
- ¾ cup cashew butter
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
HEALTHY ICING:
- 1 tablespoon coconut oil, softened
- 1 tablespoon Tejari Organic Apple + Greens Blend
OPTIONAL TOPPINGS:
- Chia seeds
- Hemp seeds
- Unsweetened coconut
- Chopped pistachios
- Dried rose petals
DIRECTIONS:
- Fit an 8x8 baking dish with parchment paper so that the paper hangs over the sides. Set aside until ready to use.
- Add all ingredients to a food processor in the order listed. Process until a smooth, malleable dough forms. You’re looking for the texture of cookie dough!
- Press dough into prepared pan to create a smooth surface that goes from edge to edge.
- Next, make your icing by mixing together the softened coconut oil and Tejari in a small bowl. It should be a consistency where you can drizzle it.
- Drizzle icing over the top of pan then sprinkle on any toppings you are using.
- Transfer baking dish to the fridge to firm up, about 30 minutes.
- Once firm, carefully lift out of pan using parchment, then slice into 16 squares, roughly 2x2” each.
- Store in the fridge for two weeks or transfer to the freezer and thaw before enjoying.
