HOW TO MAKE THIS FROZEN ENERGY BITES RECIPE
It just takes a few simple steps to create these healthy no bake acaí energy bites! They are perfect for meal prep, too! Make a large batch of these all at one time to keep in the freezer for later.
- Blend: First, combine the milk, yogurt, vanilla, Tejari Organic Blueberry + Spinach Blend, dates, acaí, and hemp hearts in a blender in the order listed. Blend until very smooth.
- Freeze: Then, carefully pour the mixture into an ice cube tray or small silicone mold. Scrape off any excess and freeze for about three hours or until solid. You can also freeze these overnight.
- Remove: Once frozen, pop the acaí bites out of the tray and transfer to a parchment-lined sheet pan. Keep in the bites in the freezer as you prepare the dark chocolate.
- Melt chocolate: Using a microwave or double boiler, gradually melt the chocolate and coconut oil until smooth.
- Cool: Then, transfer the melted chocolate to a small bowl and let it cool until it is room temperature, but still liquid in consistency.
- Dip the acaí: Working one bite at a time, take one of your frozen acaí energy bites out of the freezer and using a fork, gently dip into the melted chocolate to coat.
- Decorate: Sprinkle with toppings of choice and place back on the parchment-lined sheet pan in the freezer.
- Allow to harden: Freeze the coated acaí bites for at least one hour before enjoying.

- If not eating these frozen bites right away, transfer them to a freezer-safe container to store for up to three to four months.
